What is inside the calculator? 

The calculator covers six KPIs, each on its own tab. Enter your figures in the blue input cells and your result calculates automatically. Every tab includes a benchmark range so you can see straight away how your number compares. 

  • Cost of Sales (COS) - what percentage of your revenue is going on ingredients and consumables, updated to reflect current supplier prices. 

  • Waste percentage - what proportion of purchased food is being wasted, broken down to cost per cover and annualised total. 

  • GP by dish and by site - true gross profit at dish level and across your sites, calculated from recipe costs rather than estimated. 

  • Price variance - how much you are paying above contracted rates per unit, and what that is costing you across the full period. 

  • Credit rate - credits raised as a percentage of purchases, recovery rate, and the value of any credits still outstanding. 

  • Time to resolve issues - average resolution time for delivery and invoice queries, and the percentage still open at period end.
